Mitt sommarlov






Det gick fort. Det regnade. 3 bröllop och 7 barn. Jensa köpte en Spider. Blev pankakor när Steve och Gloria kom hit första helgen i Juli, en söndag på Way Out West och idag då Carro tog VM-guld.

Summer Holiday

Sunday # 21 Summer in Stockolm, Norwegian Pancakes

...and yesterday we beat Denmark in what must have been one of the strangest football games in swedish history. With football I mean soccer Steph, socker in swedish is sugar, if something suger it means its bad, the opposite can be super, same word as in english, but it also has the meaning drinking alcohol. And here endeth the lesson.

Today I didn´t make any pancakes. My mom did. They are norwegian and are called svele
2 eggs
5 dl flour
6 dl yoghurt
1 dl sugar
1 tps vanilla
2 tsp baking pwder

My grandma was norwegian (on my father side). So a hommage to her.

Sunday # 20 Tea for two

This started out as a wonderful day. Now that is nearly over I can say it kept it´s promise. Been sunshine all day. I´ve been with the locals at the Street recycle festival, which is similar to what happens on Queen´s day in Amsterdam, but on a much smaller scale. Basically people take whatever stuff they don´t want any more out to the street and sell it, trade it or give it away.



Thinking there was no time for a pancake brunch me and Anna started out with tea for two.


The pancakes today contains Parmesan cheese, pine nuts and basil flavoured olive oil. So a bit like pesto. Served with rocket and cherry tomato.

2 eggs
2 dl wheat flour
3 dl milk
½ dl grated parmesan cheese
50 g roasted and fine chopped pine nuts
2 tbsp olive oil

When we were finished Jens came over ad had some of the above pancakes turned into mushroom or chicken filled crêpes.



Filling made with

2 small onions
dash of white wine
1 dl cream
½ dl vegetable stock
300 g champignons or chicken
black pepper

Sunday # 19 Apple Pancakes



Wonderful day today, summerlike. Had pancakes and the got beaten at golf by Jens.



The champ

Apple pancakes with apple and ginger sauce.
These one I did without a recepie, just had some of apples.
2 eggs
2½ dl(one cup) flour
1 tsp baking powder
1tbsp sugar
1 pinch salt
2 dl milk
1 dl concentrated apple juice
One grated apple (I think it was a Jona Gold)

Sauce
1 dl water
½ dl muscovado sugar
1 green apple (Granny Smith)
1 red apple (Red delicious)
1 small piece of fresh ginger.
Apple liquer (optional)

Bring all the ingredients to the simmer and keep them there until soft. Mix it all in a blender.

Sunday # 18 Cheese Cake

SO I just made cheese cake for myself today. I bought a prefab. Couldn´t think of a new pancake to make and was tired. I leave you with the lyrics for "Cheesecake truck" by King Missile, from the album Mystical Shit.

So then I got this idea about driving a cheesecake truck,
Because I figured at the end of the day I could take some of the leftover cheesecakes home,
And I love cheesecake.
So I went to the cheesecake company,
And they asked me if I could drive a truck,
And I said yes and they said you re hired.
So the next day I got in the truck with all the cheesecakes,
And I drove about a block and I just had to have a cheesecake.
So I pulled over and I opened the trunk and I got a cheesecake,
And I also took one for later,
And I took one for my friend Farmboy,
And I took one to bring home,
And by that time I had eaten one of the cheesecakes.
So I took another one.
Then I figured I might as well stop at my house to drop off all the cheesecakes.
So I take five cakes to eat on the way,
And I drive another block and a half to my house.
Now it s lunchtime so I eat ten cheesecakes and a cheesecake for desert.
I should point out by the way that all of these cheesecakes were very delicious.
Anyway, I decided that the only thing to do would be to eat all the rest of the cheesecakes and hide the truck somewhere and leave town.
And I miss everybody a lot,
But I m not really sorry,
Because they were very delicious cheesecakes.

Sunday # 17 Rose Water Pancakes

So , this Sunday I have two confession. One:I lost my camera, so blurry cellphone picture. Two: Forgot to take a picture of the real hit today, Anna´s Eggs Benedictine.

Today some collegues from an old shut down hospital called Rosenlund. In memoriam I found these Rose Water Pancakes in a book about brunches, but unfortunately I did not find any Rose water. So did them anyway, even though the pun was lost. Turned out nice but Anna really won the price today.

I don´t really know how to make Eggs Benedictine (that is like proper cooking that takes proper skills) so I won´t go into that.
The pancakes, however, turned out to be something like the Amarican Pancakes made in January, but without the cottage cheese.

For 4 persons

3 3/4 dl flour
1 tsp baking powder
2 tbsp sugar
1 pinch salt
2 eggs, lightly whipped
2½ dl milk
60 g melted butter

Topping:
400g strawberries
½ dl Maple syrup
1 tsp Vanilla extract
2 tsp Rose Water
100 g whipped butter

Optional:
Sugar and cinammon, to turn the pancakes in before serving

Sunday # 16 Sex, Drugs and Poffertjes

I'm currently in Amsterdam , so this week there will not be any new recipe from me. I will however give a review of the famous dutch pancakes (hot ones) and Stroopwafels (cood ones) and some japanese pancakes my host here recommended.




This was a Amsterdam bonus pancake: Okonomiyaki, the Japanese pancake. I wont be going to Japan this year so it worked out fine. The batter i s made by 300 g flour, 200 ml water and 2 eggs. This one is filled with squid and spring onion and topped with seaweed, mayo and a strange fish flake. But it was good.

* 125 grams of flour
* 125 grams of buckwheat flour
* 300 ml milk or water
* 1/2 spoon of syrup
* 1 egg
* 10 grams of (dried) yeast
* a little bit of salt
* 75 grams of melted butter
* powdered sugar

Stroopwafels, buy them anywhere, eat them anywhere. Guaranteed to increase your blood glucose with at least 100%. Delicious.

Sunday # 14 Babsylies french pancakes

Today was (is) a fantastic day. Blue sky, 20 degrees, smells like summer.
Been walking around town, looking at people and their sunglasses.
Todays pancake recipe comes from France. A contribution from Babsylie, who posted this recipe some time ago.



Jakob and Lotta stopped by before a Christening


So:

500 g flour
1 liter milk
1 tsp baking powder
pinch of salt
6 eggs

Mix it all together and let it rest for an hour. Fry on medium heat. Very good with savory condaments like ham (but not for me), cheese etc.
I had cottage cheese, tomato, pepper, leek on mine. Delicious.

Sunday # 13 French Toast

Spring is still here!

It is Easter and to celebrate the holiday we went out to the archpelago outside Stockholm.

This is not my recipe and I didn´t make the toast so Elin and Klas should really write this.
I can just say thank you and they were delicious.

3 eggs
2 dl milk
Whisk and dip white bread. Fry with butter in a pan.

To go with:

Assorted fruits
Maple syryp
Powder sugar

Sunday # 12 Potato Pancakes

Or Raggmunk in Swedish. Usually with some sort of pork but not in my kitchen.

Recipe

2 eggs
3 dl milk
2 dl flour
3 medium potatoes
1 onion
1 tbsp oil
salt
pepper
butter to fry

Grate the potato and chop the onion. Mix it with batter. Usualu need a little longer in the pan. Served with lingonberry jam.

Sunday # 11 - Waffles

Today is Waffle day in Sweden. The 25th of March is the day the angel Gabriel told Mary she was pregnant. Our maid/woman/wife is Vårfru in swedish, eventually it turns in to Våffel, wich is Waffle. That is the short verion. Anyway, Waffle is almost pancake so here we go.
I decided on some swedish ones, one sweet, one savory. And also a Belgian waffle, since they are world famous.
The most sensitive palate(Anna) thought the Swedish one was better.Go Sweden.

Recipe for Belgian Waffles
1 package dry yeast
2 cups lukewarm milk
4 eggs, separated
1 teaspoon vanilla
2 1/2 cups sifted flour
1/2 teaspoon salt
1 tablespoon sugar
1/2 cup melted butter

Sprinkle yeast over warm milk; stir to dissolve. Beat egg yolks and add to yeast mixture with vanilla. Sift together flour, salt and sugar; add to liquid ingredients. Stir in melted butter and combine thoroughly. Beat the egg whites until stiff, carefully fold into batter. Let mixture stand in a warm place about 45 minutes (I put in microwave on keep warm cycle) until mixture doubles in bulk. Use 3/4 - 1 cup per waffle, makes 8-12 waffles. Top with cool whip and strawberries or fruit of your choice.

Swedish Waffles Old Style, which are very similar to Belgian ones. Just switching yeast for baking soda.

4 eggs
1 pinch salt
2 tbsp sugar
1 ½ dl water
4 ½ dl milk
6 dl flour
1 ½ tsp baking soda
1 tsp vanilla suger
1 dl melted butter

Mix eggs, salt and sugar with half of the water and milk. Add flour and baking soda and whip until smooth. Add rest of milk and melted butter.
Serve with whiped cream and jam or fruit.

Savory Potato and Leek Waffles. Very popular (among the adults)

3 dl flour
1 tsp baking soda
4 dl milk
50 g melted butter
½ dl cream
2 grated potatoes
1 finely chopped leek

Mix as above. Add potato and Leek to finished batter. Serve with this sauce

200 g Creme Fraiche
100 g Parmesan cheese
Salt and Black pepper to taste

Sunday # 10 - Crêpe Suzette

Back on track. Time is on my side. Internet is working.
The refurbishing is done, or sort of. There will be no more carpenters here, just me messing things up. But for the first time in four months we can put something where it belongs and not just move stuff around.

Today celebration with Crêpe Suzette

Highly appreciated, especially by Elin, who was just home from NYC.

Basically they are Orange pankakes with Orange sauce flambéd with orange liquoer, preferably Grand Mariner. I used Cointreau, worked out fine.

The Sauce
50 g melted butter
Grated peel and juice from 2 oranges
2 sliced oranges without peel
1 tbsp vanilla sugar
2 tbsp powdered sugar
Cook on medium heat

The pancakes
50 g melted butter
2 eggs
2 dl milk
100 g plain flour
Juice from ½ orange
1 tbsp white sugar

Fry on medium heat, after turned, sprinkle powder sugar and add small amount of liquor. Turn the lights out. Set fire to it. Amaze your friends, amuse yourself.

Sunday # 9 - Thai Pancakes



If you are wondering, internet has not been healty in my apartment, hence the post-posting. Last sunday was Thai Pancakes (Katrin just came home from Thailand). I found two recipes I wanted to try.
One was more bread -like, good but no sensation. The other one had calories for a week as Anna put it.
The Jury

So here we go
Sweet one:
2 eggs
400 ml of cocunut milk
2 dl plain flour
1 dl sugar

These are a bit tricky to fry, use medium low heat, make em thick(ish)
After turne, put some chochlat and half a banana on it before folding.
Serve wíth whipped cream.

Bready one

25 g yeast
250 ml water
½ tsp salt
1 cooked cold potato
5 dl wheat flour

Mix everything. Let it rest for 2 hours.
Split it 12 pieces. Bake the pieces out. Fry in oil.
Serve immediately with banana,condesated milk and choclate sauce.

Sunday # 8 - Leftovers


No new pancake on this sunday, I was out travelling to Uppsala for a MSF meeting, so
today (25 feb) there was only leftovers. An old American pancake, sliced and fried again.

Sunday # 7 Dessert Pancakes

This week I cheated, the pancakes were eaten on Saturday, but the guest stayed until Sunday so that counts for something.
This is a (or the) book circle. We meet every now and then to discuss a book, this time in the genre swedish vampire fiction. The book got good marks, the pancakes too I think. the jury R->L consist of Stina, Jesper(hidden),Anna-Maria, Anna, Otto, Magnus and Johan.
This is a mix of some of the earlier recipes, and some added sugar and honey.

3 dl plain flour
½ dl sugar
1 tbsp honey
1 tbsp baking soda
5 eggs
5 dl milk
1 dl beer
pinch of salt
butter to fry in

Mix all dry ingredients, then add egg. Mix in half the milk. Put the batter in the fridge for 30 mins. Then add the rest of the milk and the beer. Fry on medium heat.
Served with vanilla ice cream and raspberry sauce.

Anna had the flu today, and there is no room for guest any more. Next week this whole refurbishing business will hopefuly be finished.

Sunday # 6 Blintz or Bliny


The first jury of today: Emil, Karolina, Joakim, Fredrik (Annas brother) and Anna.
E and J ate ordinary plättar - small pancakes.

The second jury of the day: DRC-Anna, Selma 14 months, Abbe and Cecilia

The English word blintz comes from the Yiddish "blintse" which in turns come from blin. "blin" comes from Old Slavic mlin, that means "to mill" (Wikipedia). I did a buckwheat pancake with no religous connections (or not to me anyway), and that might be called a Bliny. Who knows, I don´t, I´m swedish.


We had a russian theme this week for no apparent reason. Someone, forgot who, thought of it last week. So the plan was for a beet root soup called Borsjtj and Bliny. But on Friday I met Markus´ Mom Malou, who contributed woth a recepie, hereforth know as the 3M pancake, and had to add that too. Could also be called the 3 egg pancake, cause it has 3 times the amount of egg as an ordinary pancake.
Borsjtj

800 gr beet root
300 gr carrots
200 gr swede (one of the reasons to make this)
200 gr celery
2 red apples
600 gr cabbage
2 onions
2 cloves of garlic
2 dl chopped sour pickled gherkin
1,5 liters of vegetable stock
1-2 tbsp white vinegar
Salt and black pepper

Fry onion and garlic in a bit of oil. Grind all the root vegetalbles on the coarse side of a grater or in a food processor. Mix it with the stock and simmer for 20-30 mins. Save some of the beet root to add just at the end, will preserve a beautiful red color.
Serve with sour cream, or smetana if you got it.


Bliny

25 g yeast
5 dl milk
2 dl buck wheat flour
2 dl wheat flour
2 egg yolks
1/2 tsp Salt
3 tbsp sour cream
2 egg white

Heat the milk to 37 degrees, mix it with the yeast. Add everything but the sour cream and the egg whites. Make a smooth batter and leave it to rise for 1-1½ hour in a warm place.
Whip egg whites to a foam. Carefully mix it wit the batter.
Fry on middle heat griddle.
Serve with sour cream, roe and red onion or sour pickled gherkin and honey.



3M pancake

1 dl wheat flour
2 dl milk
3 eggs
pinch of salt

Proceed as usual. Turned out very good.


My parents, Birgit and Nils, came over, became jury number 3.

As you figure out I don´t have memory nor typing skills good enough to post everybodys opinion. So, in conclusion:
People like Bliny and for someone who is getting bored with the ordinary pancakes (not me:) they are a very nice option. Could be agood appetizer or starter.
Borsjtj is a tasty, cheap soup. Also makes your pee red.
3 M pancakes are sort of omelette with flour in it. Excellent for a quick snack or bodybuilders. Sweet or savory depends on accessories.
